i find this distressingly attractive tbh

A $5 knife can also do this if you know how to sharpen it.

Sharpness isn’t what determines the quality of the steel, how easily it takes an edge and how long said edge lasts is what determines that.

I can get my $2.50 kiwi knives just as sharp as my $300 Kasumi or Wustof ones. but guess which ones hold the edge longer.
